Ingredients

Ladyfinger – 300 grams

Tomatoes – 3

Onion – 1

Fenugreek seeds – 1/2 tsp

Ginger-garlic paste – 1 tsp

Green chillies chopped – 3

Red chilli powder – 1 tsp

Cumin powder – 1 tsp

Coriander powder – 1 tsp

Fennel seeds – 1/2 tsp

Dry mango powder – 1 tsp

Chaat masala – 1 tsp

Turmeric – 1/2 tsp

Oil – as per requirement

Salt – as per taste

Method – First of all, take ladyfinger and cut them into 1-inch lengths. After this, cut tomatoes into small pieces.

- Take a mixing bowl and add red chilli powder, cumin powder, coriander powder, fennel seeds, chaat masala, dry mango powder, turmeric, and mix everything well.

- After this, add ladyfinger to these spices and mix them well. Then marinate it for 15 minutes.

- Now put oil in a pan and keep it on medium flame for heating. When the oil is hot, add fenugreek seeds and fennel and fry them.

- Now add finely chopped onion and fry it till it becomes golden. It will take 2 to 3 minutes.

- Now put the marinated ladyfinger in the pan and cook it on a low flame for 5 minutes. After this, add ginger-garlic paste to it and let it cook for some more time.

- After this, add finely chopped tomatoes and salt as per taste in the pan, mix it with the help of a ladle, and cook.

- Now cover the pan and let the vegetables cook for 5 more minutes. Achari Bhindi is ready. Serve it with roti or paratha.
